Tofu Pesto Avocado Sandwich

Crispy grilled tofu, sweet capsicum, creamy avocado, aromatic pesto, hearty hummus and crisp spinach sandwich.

A flavorful sandwich with grilled tofu, capsicum, avocado, pesto, hummus, and spinach. Fresh, filling, and perfect for lunch!

Makes: 2 sandwiches

Ingredients

  • 4 slices bread
  • 150 grams firm tofu, sliced (about 8 slices)
  • 1 tablespoon cornstarch
  • 1/2 teaspoons salt
  • Drizzle of olive oil for frying
  • 3 tablespoons (50 grams) hummus
  • 3 tablespoons (50 grams) green pesto
  • 2 handfuls (25 grams) baby spinach leaves
  • 2 pieces (40 grams) jarred roasted capsicum
  • 1 small avocado, sliced
  • cracked black pepper (optional)

Instructions

1. Slice the firm tofu and pat both sides dry with a kitchen towel or paper towel. Toss the tofu slices evenly with cornstarch and salt. Heat a drizzle of olive oil in a large frying pan over medium high heat. When it is hot, add the tofu slices and cook for about 5 minutes on each side or until golden and slightly crispy. Set aside.

2. Optionally, lightly toast the bread. On one slice of bread, spread a generous layer of hummus and pesto. Then press on the spinach leaves and place on the grilled tofu, roasted capsicum and avocado. Optionally, sprinkle with black pepper. Put the other slice of bread on top, cut in half and enjoy!
