A hearty chilli con carne made with beans, tomatoes, and spices. Perfect for a budget-friendly, wholesome and cozy dinner or meal prep—easy, filling, and full of flavor.

Ingredients
- 1 brown or yellow onion, diced
- 1 capsicum, diced
- 1 tablespoon fresh chillis, chopped
- 2 stalks celery, diced
- 3 cloves garlic, finely chopped
- 400 grams turkey or beef mince
- 2 tablespoons chilli powder
- 2 teaspoons cumin
- 2 teaspoons dried oregano
- salt to taste
- a pinch of cracked black pepper
- 2 tablespoons tomato paste
- 800 grams canned diced tomatos
- 400 millilitres stock of choice
- 800 grams red kidney beans
- 1 teaspoon sugar
- 1/4 teaspoon baking soda
- 2 bay leaves
- coriander
Instructions
1. Heat a drizzle of oil in a large pot over medium heat. When the oil is hot, add the garlic, onion, celery, capsicum and fresh chilli. Saute the ingredients together for about 8 minutes, or until the vegetables are slightly softened and translucent.

2. Use your cooking spatula to move the vegetables to the side of the pot, creating a space in the middle of the pan. Add the turkey of beef mince to the centre and break it up. Cook everything together until the meat is mostly browned.

3. Add the chilli powder, cumin, oregano, salt and pepper. Cook for another 2 minutes, until the meat is fully brown.

4. Add the tomato paste and stir to combine. Then pour in the canned diced tomatoes, stock of choice, kidney beans, sugar, baking soda and bay leaves. Stir well to combine, then bring to a boil.

5. When the mixture is boiling, reduce the heat to medium low and simmer, covered, for about 35 minutes. After 35 minutes, remove the lid and boil for another 10 minutes to thicken. Serve the chilli con carne on top of rice or baked potatos, garnish with coriander and enjoy! Store in a sealed container in the refrigerator for up to 4 days. Simply reheat in the microwave or stovetop.
