Frozen Yoghurt Tarts – Strawberry Peanut Butter Chocolate

Healthy, decadent and refreshing strawberry peanut butter chocolate frozen yoghurt tarts. A crisp, indulgent treat to satisfy your sweet cravings!

These healthy and refreshing strawberry chocolate peanut butter frozen yoghurt tarts are the perfect indulgent treat to satisfy your sweet tooth! Once made, you can store them in the freezer and eat whenever you want!

Ingredients

  • 7 medium strawberries, stem cut off
  • 60 grams (1/4 cup) cottage cheese, sub for greek yoghurt
  • 60 grams (1/4 cup) thick greek yoghurt, sub for cottage cheese
  • 1 tablespoon (20g) honey, or maple syrup or agave
  • 200 grams dark chocolate
  • 4 tablespoons (80g) natural salted peanut butter
  • crushed peanuts for topping

Instructions

1. Blend 5 strawberries, the greek yoghurt, cottage cheese and honey in a blender or food processor until smooth.

2. Spoon the mixture into 4-5 lined muffin tins. Transfer to the freezer and freeze until the top has fully set – about 2 hours.

3. Before removing the tray from the freezer, melt the dark chocolate. To do this using the microwave, put the chocolate pieces in the microwave for 20 second intervals, stirring throughout, until fully melted. For the double boiler method, heat a small pot of water until it boils. Turn off the heat, and place a bowl containing the chocolate pieces on top of the hot water pot, making sure the water does not directly touch the bowl. Regularly mix until fully melted.

4. Meanwhile, slice or dice 2 strawberries. After you remove the frozen yoghurt from the freezer, top each tart with the strawberries, making sure to cover the surface as best you can.

5. Then, drizzle about a spoonful of peanut butter on top of each tart, spreading it out. To make it more spreadable, you may want to microwave the peanut butter for a couple seconds.

6. Finally, top with the melted dark chocolate and crushed peanuts (optional). Place the tray back into the freezer and freeze until the entire tart has hardened – about another hour.

7. Let the frozen yoghurt tarts thaw for a couple minutes before enjoying! Store them the freezer in an airtight container.
